When we are delivering a quote, we choose: Save PDF & Attach to CRM - see attached image. This attaches our quote as both a PDF and a DTF. We only need the PDF, so as an additional step, we delete the DTF. Is there a setting I can change so we're only saving the PDF?

When saving, there's a checkbox to create/update document (or similar wording). That relates to the DTF, uncheck that and no DTF should be pushed.
