Based on the quantity selected for a product, I need to take the calculated Extended Weight number and total all products with same Item Type and have it change the Quantity in a seperate line to match the totalled amount from the Extended Weight column.

That could almost certainly be achieved with a script (assuming that you are running the Corporate edition of QuoteWerks Desktop). We'd just need to understand how the script would recognise the Line Items whose Extended Weight we're summing (Item Type = ?) and the Line Item to update the Quantity of (ManuPartNumber = ?).
